Coffee Talk

Let's catch up over coffee!! What are you having? I'm sipping on my favorite, Colectivo Co-Optiva with a scoop of GLG collagen and a splash of half and half. It never gets old. 

What would you tell me over coffee? 


If we were having coffee, I'd first tell you that I am obsessed with avocado toast with an egg on top. I mean who isn't? Last week, the Jewel, our local grocery chain, had a coupon for a bag of 5 avocados for 99 cents. I couldn't believe it! I went back later in the week to get one more bag before it ended. The staff at work was talking about it too. I'm still eating those avocados. It sure will be hard to go back to paying $$ for avocados again.


If we were having coffee, I'd tell you that after 24 years, I finally have an outlet in my kitchen island. I know, you are all thinking WTH, you're married to a carpenter. That may be true, but getting him to do work on the house is a challenge. And forget about hiring someone, when he reminds me that he can do the work, lol. My oldest son, who is an electrician, was off work for 2 weeks and he offered to do this for me. Dreams do come true...lol

Now if I could get someone to update my bathroom...


If we were having coffee, I'd also tell you that my youngest son spent his spring break in Portugal with his rugby team. Yes, they played a couple of rugby games, but mostly they did some sightseeing and partying, or 'clubbing', as he called it. They went to Lisbon and Porto. He sent me tons of updates and photos. It's hard to believe that he is done with rugby and I am so glad he got this opportunity with his teammates. I also paid his rent for the last time this week. Crazy to think that this is all coming to an end!


If we were having coffee... I'd share that Cocoa had a birthday recently! She is 7! She's still struggling with allergies and ear infections in that remaining ear, but you'd never know it save for the vet bills. We celebrated by buying her a new pack of tennis balls and a doggie birthday cookie, which she devoured. 


If we were having coffee... I'd share how happy I am that we are no longer required to wear masks at work! Now don't get me wrong, I am pro-masking and will continue to mask when I see sick patients. But it is so nice to not have to mask for well-child visits. Seeing my patients' and parents' faces again after 3 years? Priceless. One of my parents commented that she has never seen my face. Neither has her child. Until now!

  1. Avocadoes go bad so quickly -- even in the refrigerator -- unless you eat them before they ripen? I only buy a couple at a time!

    We have so many outlets in our kitchen (we redid the kitchen first thing when we moved here). Cobbler's children syndrome for you -- you must be so happy you finally have one! Kudos to your kid for making it happen.

    Portugal has been on my list of places to go for a long time now . . .

    1. I let them ripen on the counter and then put them in the fridge. I am eating the last one today! It worked out really well.

  2. I too have been loving Avocado Toast ( or bagel) with egg on top but I also top it with Everything Bagel seasoning! I've been addicted to that lately! Yayfor getting that outlet in your island, I bet that makes things easier in the kitchen. Happy Birthday to sweet Cocoa!

  3. Oooh I'll bet M loved Portugal! We were there back in the day and it is a hidden jewel! Happy birthday to Cocoa! Oz turns 6 in a couple of weeks and I can't believe it. Where has the time gone? I do love some avo toast. Lately I've been using sourdough english muffins and they're delish!

  4. Funny I've been obsessed lately with avocado toast too - always so good! What a fun trip for your son - I bet Portugal was amazing! It is wild to think that you're seeing some of your patients faces for the first time.

  5. Ha, I'm laughing about you being married to a carpenter but not getting any work done on your own house. It's like people always ask me if I give my husband lots of massages- no, never! It's the last thing I want to do when I come home from work.
    I'll bet it was a little bittersweet making that last rent payment. We just made our last orthodontist payment (ever!) and while I'll certainly be glad not to be spending that money, I did have a little twinge. Of course there's always Cocoa- sounds like those vet bills will go on and on. I'm glad she had a happy birthday!
    We haven't masked at work in a long time. But I've been thinking about wearing one for the next two weeks- just as a little extra protection before my race. I don't want to get sick now!

  6. Chocolate Mac Nut coffee from our local shop today. Dr. Conkey's (https://drconkeys.com/) started out as a candy shop in 1982 but they carry more coffee these days, although their truffles are amazing!
    I love avocado toast, haven't had it in a while. Best bargain - I'll be flying home from Nashville in a couple weeks for free (points) and I got upgraded seats because it's my birthday month. Thanks, United!

  7. DO not like avocados....

    But lately I'm on a salad with mandarins, cottage cheese and beets.

    I just got 2 new bathing suits... CHEAP!!

    And yes, it's so nice to see people's faces. Though it did hide all my wrinkles LOL

  8. Portugal offers some great tax benefits (besides the climate, nature and delicious food and wine). Based on the number of Swiss people retiring there, it must be fabulous!
    I love avocado toast and egg!! Do you have a runny egg or a hard-boiled egg?

    1. I alternate--at home, I have a runny egg but when I bring it to work, it's a hard boiled egg. Gotta mix it up, lol

  9. Although I like guaq (on occasion), that's my limit for avocados. To me, they just don't have much for flavor (and I know I'm the exception to the general public on that...just like with coffee, beer and bananas, LOL).

  10. I love avocado and egg on toast. I actually eat that regularly. avocados can be expensive though! you definitely got a great deal! That trip your son went on sounds amazing! Portugal is so great. We were recently in Spain. Honestly anything south of France and I'm a much happier camper! And nice that your other son put an outlet in for you. The Netherlands is kind of dumb with masking but before I went to see my parents in Spain I masked up in public. I've never seen so many side-eyes in my life. Like, i can mask if i want to, I don't have to explain anything (my dad is going through chemo, we didn't want to pick anything up before we arrived). I can imagine it's nice to have your well patients actually see you.

  11. That is a great deal for avocados! I also love them but do not eat them as much because they're expensive. Happy Birthday to Cocoa! Looks like she enjoyed her birthday. It's been over a year since I haven't masked at work. Though I did have to for a few days when I had Covid and went back to work.

  12. I. Love. Avocado toast. So does A. We don't make it a lot, but it's so good - we have two restaurants here that make the most incredible avo toast - it tastes so much better when they do it. Happy birthday, Cocoa! I'm glad you can stop masking. Portugal looks amazing! I bet they had the best time.

  13. I love avocado toast but not the egg bit, and also here, avocados have to come a long way, so I try not to have them too often now. What's your son got planned for after college?

    1. Good question! He's going to stay in Madison for the summer and tend bar, then he is going to move to Chicago to live with his brother. I'm hoping he goes to grad school but he hasn't applied yet.
